I have a 2 bay 2 x 4TB WD MyCloud EX Ultra which has 2 USB ports on the rear. I also have 2 additional 4TB WED Red drives. If I put those two drives in a 2 bay USB3 caddy, and connect this to the rear of the WD MyCloud NAS, will the NAS then ‘see’ a total of 4 x 4TB HDD’s and thus allow me to set up RAID5?

no.
I doubt the EX2 ultra would even recognize two drives mounted in a single caddy. The USB port isn’t (I don’t think) setup as a standard daisy chain usb port.

What if I added them in individual separate caddy’s?
My strong suspicion is “no”.
The USB drives are meant to be “temporary” and “removable”; which would be bad if they are part of a Raid 5 array.
